The Grimaldi’s Story

At Grimaldi’s Pizzeria, our roots run deep stretching from the heart of Harlem in the 1940s to the lively streets of Hoboken today. Our story begins with an Italian immigrant and his nephew in a humble New York pizzeria, where a passion for coal-fired pizza first took hold. That nephew, Patsy Grimaldi, carried forward the traditions of handcrafted dough, rich tomato sauce, and the unmistakable flavor only a coal-burning oven can create a craft that would define generations of pizza making excellence.

Decades later and an ocean away, a young Irishman dreamed of building a better life. Trained as a carpenter, he came to the United States and, through a modest newspaper ad, crossed paths with Patsy Grimaldi himself. What began as a construction job building the very oven that would bake the pizzas soon grew into a partnership founded on shared dedication, quality, and heart. He worked behind the counter, learned the craft, and in time opened his own restaurant, right in Hoboken, New Jersey.

From the day the doors opened in 1994, Grimaldi’s became a cornerstone of the community in Hoboken a place where families gathered, friends met before nights out, and neighbors returned again and again for the smoky, crisp perfection of a true coal-fired pizza. Today, there are two independently operated Grimaldi’s chains across the United States. 

At every Grimaldi’s, the spirit remains the same, food is more than a meal it’s a connection. Each pizza, wing, calzone, and pasta dish carries the warmth of tradition and the care of those who believe that family, community, and great food are meant to be shared.
